Heat the oil in a skillet over medium heat, add the onion, garlic, and fry for 2 minutes, increase the heat and add the beef, continue cooking for 3 minutes. Remove excess fat if necessary, add the zucchini, and cook for 2 minutes. Pour in the poblano cream plus one can of water, lower the heat, and simmer for 10 minutes; add the parsley. Remove from heat.
