1 kilo ground meat, beef
1/2 kilos white onion, finely chopped
5 sprigs celery, finely chopped
3 carrots, chopped
1 1/2 cups red wine
3 cloves garlic
3 ounces olive oil
2 1/2 kilos tomato
1 gram salt
1 gram pepper
1 tablespoon oregano
1 sprig rosemary
10 leaves bay
Preparation

Fry the garlic and finely chopped onion in oil.
When it starts to brown, add the meat and the rosemary, oregano, bay leaf, and let the meat brown.
Add the finely chopped carrot and celery with the wine until reduced.
Add the poached tomato, peeled and blended with salt and pepper.
Simmer for one hour.
