Beef Ribs in Adobo

  • 5 ancho chiles, cleaned and deveined
  • 5 chipotle chiles
  • 1/4 onions
  • 2 cloves garlic
  • 5 tomatoes, cut into quarters

  • Boil the meat with salt and a clove of garlic.
  • At the same time, boil the tomatoes with the chilies, onion, and garlic.
  • When the tomatoes are ready, blend everything with a little of the water they were boiled in.
  • Put in a pot on the stove, add the oil, pour in the blended mixture, and season with a little salt. Once seasoned, add the meat and a bit of the broth and let it boil. Once it has boiled, turn off the heat.
