Beef Shank in Achiote

In this recipe, the beef shank is prepared with an achiote sauce with orange, garlic, marjoram, and cooked in banana leaves wrapped in aluminum foil in the oven.

  • 4 meat shank, in slices
  • 1 small box achiote
  • 2 cloves garlic
  • 1 pinch marjoram
  • 1 tablespoon vegetable oil
  • banana leaves

  • Blend the achiote, orange juice, garlic, oil, marjoram, salt, and pepper.
  • Wash the beef shank and then place it in a container along with the blended achiote and let it rest for 30 to 60 minutes.
  • Cut squares of aluminum foil and place a roasted banana leaf. Put a piece of shank and achiote chili, wrap it up, and place it in a baking dish.
  • Place in the oven at 180 degrees Celsius until cooked (the time depends on the thickness of the meat).
