Blend the garlic cloves, salt, pepper, and 1/2 cup of water and pour into a container to marinate the steaks in this mixture.
Boil the green tomatillo or miltomate and add the morita chiles until cooked. Blend these with the garlic cloves.
Sear the sliced onion and potatoes with their skins cut into 2-3 cm cubes in a saucepan for about 3-4 minutes, avoiding burning the onion. Remove from heat and set aside.
Drain the steaks and sear them in the same oil. Reserve the water from the marinade.
Once seared, add the blended sauce and let it come to a boil, add the potatoes and onion, add the remaining water (from the marinade and the missing cup of water), salt to taste. Cover and cook until the potato is tender.
