3 ladles beef broth, trimmed
800 grams beef tenderloin
1 onion, small, chopped
5 shallots, chopped
2 sprigs thyme
2 leaves bay
2 sprigs chives, chopped
1 teaspoon cornstarch

Trim the beef tenderloin and then slice it. Season to taste!
Boil a ladle of beef broth, add chopped shallots, green onions, and onion.
Cook for 3 minutes and then add the beef medallions.
Mix the meat with the previously added vegetables and cook for 5 minutes over high heat.
Add the two tablespoons of leftover beef, bay leaves, thyme sprigs, lemon juice, and season to taste!
When the mixture comes to a boil, reduce the heat to maintain a gentle simmer.
Then cook for 5 minutes while maintaining a gentle simmer and add the mushrooms.
Continue stirring for another 20 minutes; before the 20 minutes are up, dissolve the cornstarch in water and add it to the pot.
Wait until the sauce thickens, cover the pot for a few minutes, and serve!
