Beef Tips in Mushroom Sauce

  • 4 tablespoons olive oil
  • 3 cups tenderloin tip, cut into thin strips
  • 1 onion, very thinly sliced
  • 1 clove garlic, finely chopped
  • 2 tomatoes, seedless, and cut into small cubes
  • 3 serrano chiles, finely chopped
  • 2 cans cream of mushroom, Campbell's ®
  • 2 pinches salt
  • 4 tablespoons fresh cilantro, finely chopped

  • Heat the oil in a deep skillet over high heat, fry the beef tips for 5 minutes or until golden brown. Add the onion, garlic, and cook for 2 more minutes. Add the tomato and chili, and finish cooking for 3 more minutes.
  • Add the mushroom cream and one can of water, lower the temperature, cook for 10 more minutes, and season.
  • Before serving, add the cilantro and mix.
