Baked Layer Burrito

It is a Mexican dish, a new way to prepare a delicious burrito that you can share with your whole family or friends at any time, whether for breakfast or dinner.

  • 1 kilo ground beef
  • 1 red bell pepper, chopped
  • 1 carrot, large, chopped 1 carrot, large, chopped

  • 2 cans canned chopped tomato without salt, (14.5 oz each) of no salt added diced tomatoes, undrained
  • 2 cups mexican sauce
  • 1 teaspoon cumin powder
  • 1 cup ear corn
  • 6 flour tortillas, halved
  • 1 can canned refried black beans
  • 1 package cheese, (8 oz) of Mexican four cheese style shredded cheese
  • 1 Philadelphia® cream cheese

  • PREHEAT: the oven to 400ºF
  • BROWN: the meat with the bell pepper, carrot, onion, and garlic in a large non-stick skillet. Add the tomatoes, sauce, and cumin; mix everything well. Cover the skillet; cook, maintaining a gentle simmer for 5 minutes. Remove the skillet from the heat. Stir in the corn kernels to the mixture.
  • SPREAD: 2 cups of the tomato mixture over the bottom of a 13x9 inch baking dish; place 4 tortilla halves on top with the cut sides facing the sides of the dish. Cover this with layers of half of the beans, 2-1/2 cups of the remaining tomato mixture, and 1/2 cup of cheese. Repeat the layers. Top with the remaining tortillas, tomato mixture, and cheese; cover the dish with a sheet of aluminum foil, sprayed with cooking spray.
  • BAKE: for 35 to 40 minutes or until completely heated through; remember to remove the aluminum foil during the last 5 minutes. Let the baked dish rest for 5 minutes before cutting to serve.
