Beef in its Juice

Transport yourself to the beautiful state of Jalisco with this beef in its juice, a classic of the state's cuisine and ideal for any occasion as it is very easy to prepare. The combination of bacon with beef, green sauce, and beans is a true delight. Accompany it with warm tortillas and avocado.

  • 5 tomatillos, for the sauce
  • 2 cloves garlic, for the sauce
  • 2 serrano chiles, for the sauce
  • 1/4 onions, for the sauce
  • 1/4 cups chicken broth, for the sauce
  • 1/4 cups fresh cilantro, for the sauce
  • 2 tablespoons vegetable oil, for sauce and beans
  • 600 grams beefsteak, in cubes
  • pinches garlic salt
  • 1 cup beans
  • fresh cilantro, finely chopped
  • onion, finely chopped
  • avocado, in slices for decoration

  • For the sauce, blend the tomatoes with garlic, serrano pepper, onion, chicken broth, and cilantro until you obtain a smooth sauce.
  • In a small pot, heat a tablespoon of oil and add the sauce, salt, and pepper and cook for 10 minutes. Set aside.
  • In a deep skillet, cook the bacon over medium heat until browned, add the flank steak and cook until it releases its juice. Add the green sauce and season with salt and pepper, cover and cook until thickened.
  • In a small pot, add the remaining oil and heat the beans.
  • Serve the meat in a deep plate with beans, cilantro, onion, and avocado. Accompany with corn tortillas.
