Beef Patties in Morita Chile Sauce

  • 1 kilo tomatillo, in half, for the sauce
  • 1/2 onions, for the sauce
  • 3 morita chiles, without tail, for the sauce
  • 2 cloves garlic, without skin, roasted, for the sauce
  • 1/2 bunches cilantro, for the sauce
  • 2 tablespoons vegetable oil, for the sauce
  • 2 cups beef broth, for the sauce
  • salt, for seasoning
  • pepper, for seasoning
  • 3 cups skirt steak, cooked and shredded
  • 1/2 cups flour
  • 1/2 cups onion, finely chopped
  • 3 tablespoons cilantro, finely chopped
  • 4 egg whites
  • 4 egg yolks
  • vegetable oil, for frying
  • queso fresco, crumbled, for serving

  • Boil water in a pot and cook the tomatoes, onion, and morita chile until they change color. Drain and blend with roasted garlic, cilantro, salt, and pepper until you obtain a homogeneous consistency.
  • Pour enough vegetable oil into a pot and add the blended sauce, add the beef broth, and cook over medium heat until you obtain a semi-thick consistency. Keep warm.
  • Mix the shredded beef brisket with the flour, onion, cilantro, and enough salt and pepper.
  • Beat the egg whites until stiff peaks form and add the yolks one by one. Gradually incorporate the meat with folding movements until you obtain a fluffy mixture.
  • Heat enough oil in a skillet over medium-high heat and fry the beef patties. Use two spoons to add the meat mixture and shape it. Once golden, drain on paper towels.
  • Serve the meat patties, bathe them with the sauce, and accompany with crumbled fresh cheese.
