  • 1/2 teaspoons pepper
  • 1 teaspoon nutmeg
  • 1 teaspoon rosemary
  • 1 kilo center-cut tenderloin, clean
  • 2 red apples
  • 2 green apples
  • 1/2 onions, in quarters
  • 3 tablespoons butter
  • 1 cup evaporated milk
  • 1 cup white wine
  • 1 cup apple juice
  • 1 tablespoon cornstarch, dissolved in cold water

  • In a bowl, mix the mustard with the pepper, nutmeg, and rosemary. Set aside.
  • On a board, tie the loin with hemp twine and brush the previous mixture on it. Marinate in refrigeration for 20 minutes.
  • In a hot pan with oil, sear the loin on both sides, add the apples, onions, and butter, and cook for 10 minutes. Remove from heat and reserve the fillet.
  • Blend the vegetables from the pan along with the evaporated milk, white wine, and apple juice until you obtain a homogeneous mixture.
  • Add to the pan along with the loin, add the dissolved cornstarch, and cook until the meat is cooked and the sauce has thickened.
  • On a board, cut the loin into slices, serve with the hot sauce, garnish with apples, and accompany with salad.
