Some of the tastiest Mexican snacks are tacos, and this option with beef tongue is delicious; now you can enjoy it at home during a gathering or even for a family event.
In the pressure cooker, place the two beef tongues, previously washed, along with a peeled onion, garlic cloves, bay leaves, and three tablespoons of salt. Add enough water to cover everything. Boil without covering the pot; when it starts boiling, cover the pot, place the valve, and wait for it to start making noise.
When it starts to make noise, wait 30 minutes and the tongue will be ready. Turn off the heat and wait until you can open the lid. Carefully remove the tongue onto a cutting board, peel off the skin, and slice it to your liking. Place the meat in wax paper, inside a bowl or container with a lid that retains heat.
For the green sauce
In the blender, place the green tomatillos, half an onion, jalapeños, salt to taste, 1/4 of the cilantro bunch, and the juice of one lime. Blend and serve.
Finely chop a whole onion and the half we didn't use in the sauce, along with the remaining 3/4 of the cilantro bunch.
With the tortillas nice and warm, assemble the tacos with the meat, vegetables, and sauce to taste.
