Beef with Chili

Try this beef with chili recipe, a traditional dish from Sonora! This stew is made with beef and a red chili or guajillo sauce, which is thickened with a mixture of lard and flour. Don't miss this delicious meat, as it is very tender and full of flavor.

  • 1 1/2 kilos skirt steak, in medium cubes
  • water, to cook the meat
  • 1/2 onions, to cook the meat
  • 1/2 garlic heads, to cook the meat
  • 3 bay leaves, to cook the meat
  • salt, to cook the meat
  • 1 tablespoon allspice berry, to cook the meat
  • 15 guajillo chiles, without veins and hydrated
  • 5 cloves garlic
  • 1/4 onions
  • 1 tablespoon oregano
  • 1 tablespoon cumin
  • 3 cups beef broth
  • 2 tablespoons lard
  • 2 tablespoons flour
  • salt
  • ground pepper
  • corn tortillas

  • Add the meat, onion, garlic, bay leaf, salt, and black pepper to a pressure cooker with enough water. Cook for 50 minutes, remove the meat from the pot and shred it. Set aside.
  • Blend the guajillo chili, garlic, onion, oregano, cumin, and beef broth. Once you have a smooth sauce, strain and set aside.
  • Add the lard to a pot and heat for 5 minutes. Once melted, incorporate the flour and mix very well. When the flour is slightly browned, pour in the sauce. Cook the sauce over medium heat for 5 minutes. Finally, add the meat and if necessary, pour in a little more beef broth. Season with salt.
  • Serve the meat with chili in a deep plate and accompany with tortillas.
