Ingredients: 1 1/2 kilos skirt steak, in medium cubes; water, to cook the meat; 1/2 onions, to cook the meat; 1/2 garlic heads, to cook the meat; 3 bay leaves, to cook the meat; salt, to cook the meat; 1 tablespoon allspice berry, to cook the meat; 15 guajillo chiles, without veins and hydrated; 5 cloves garlic; 1/4 onions; 1 tablespoon oregano; 1 tablespoon cumin; 3 cups beef broth; 2 tablespoons lard; 2 tablespoons flour; salt; ground pepper; corn tortillas

Add the meat, onion, garlic, bay leaf, salt, and black pepper to a pressure cooker with enough water. Cook for 50 minutes, remove the meat from the pot and shred it. Set aside. Blend the guajillo chili, garlic, onion, oregano, cumin, and beef broth. Once you have a smooth sauce, strain and set aside.
