Easy Stew

The stew is a very traditional recipe in Mexico, but the recipe is different in each region.   • 1 kilo beef shank
  • 1/2 kilos bone marrow
  • 1/4 onions
  • 1/2 garlic heads

  • 3 ears corn, in small pieces
  • 1 cassava, in large cubes
  • 1 sweet potato, in large cubes
  • 4 carrots, in large cubes
  • 4 chayotes, in large cubes
  • 3 plantains, in large pieces
  • 3 potatoes, in large pieces
  • 1/4 onions
  • 1/2 garlic heads
  • water
  • salt
  • onion, for decoration
  • cilantro, for decoration
  • lime juice, for decoration

  • Place the beef shank, marrow, onion, half a head of garlic, a little salt, and enough water in a pressure cooker. Cook for about 40 minutes.
  • Pour this cooking mixture into a larger pot and add corn, cassava, sweet potato, carrot, chayote, plantain, and potato. Add onion again and the other half of the head of garlic. Then, pour more water and cook for 30 more minutes or until the vegetables are completely cooked.
  • Serve the stew in a bowl, decorate with onion and cilantro, and accompany with limes, tortillas, and your favorite sauce.
