Ground Beef in Green Sauce

  • 500 grams tomatillo, for the sauce
  • 3 serrano chiles, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1 cup chicken broth, for the sauce
  • 1/4 bunches cilantro, for the sauce

  • 2 teaspoons vegetable oil, or olive oil
  • 1 cup onion, sliced
  • 1 1/2 cups potato, in medium cubes
  • 500 grams ground beef
  • 5 corn tortillas, to accompany
  • 1/2 cups beans, to accompany
  • 1/2 cups Mexican red rice, to accompany

  • Grill the tomatoes, chilies, onion, and garlic on a comal over medium heat until they are charred and change color. Set aside.
  • Blend the sauce ingredients with the chicken broth, cilantro, salt, and pepper. Set aside.
  • Heat the oil in a pot over medium heat and sauté the onion and potatoes. Once they slightly change color, add the ground beef, season, pour in the green sauce, and cook on low heat for 15 minutes.
  • Serve the ground beef in green sauce in the pot and accompany with tortillas, beans, and red rice.
