Stuffed Cabbage Rolls

  • 1/4 cups onion, finely chopped for the filling

  • 3 tablespoons apple cider vinegar, for the filling

  • 1 cup tomato purée, for the filling

  • 3 tomatoes, boiled for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1 tablespoon oregano, for the sauce
  • 1 tablespoon raw sugar, for the sauce
  • 1/4 cups chicken broth, for the sauce
  • 1 cabbage

  • For the filling, in a skillet with enough hot oil, sauté the onion, add the garlic, celery, and carrot, and cook until softened. Add the ground beef, apple cider vinegar, parsley, almonds, and tomato puree. Season with salt and pepper, cook for 12 minutes. Set aside and cool.
  • Blend the tomato with the onion, garlic, oregano, sugar, and chicken broth until fully integrated. Set aside.
  • Soak the cabbage in very hot water; gradually the leaves will soften and can be separated. Remove the leaves from the cabbage and keep them in hot water until they become completely flexible. Drain.
  • Place a cabbage leaf on a board, making sure it has no hard parts for easier handling, and with a spoon, place the filling and roll it up; repeat until the filling is finished.
  • In a pot with oil, gradually arrange the cabbage rolls, pour the tomato sauce, season with salt and pepper. Cover and cook for 15 minutes over medium heat. Serve the cabbage rolls on a large plate, garnish with chopped parsley, and enjoy!
