Ground Lean Beef Stew

Beef stew with potatoes and guajillo chili. It is a traditional dish from the Sierra de Guerrero, but adapted to our family's taste. The combination of guajillo chili with mint gives it an exquisite flavor.

  • 1 kilo beef, lean
  • 1/2 kilos potato
  • 100 grams guajillo chile, roasted and soaked in hot water
  • 1/4 onions
  • 6 sprigs spearmint
  • 1 cube beef broth
  • 2 tablespoons vegetable oil
  • 2 cloves garlic
  • salt, to taste

  • Cook the meat for 45 minutes in a pressure cooker.
  • Once the meat is cooked, cut it into small cubes and set aside.
  • Cut the potatoes into cubes and set aside.
  • Chop the mint and onion.
  • Blend the chili with garlic and onion, strain, and set aside.
  • In a saucepan, heat the oil, add the cubed meat, sauté, and add the cubed potatoes, sautéing them together with the meat. Then add the mint and onion, sauté until the onion is transparent, and add the strained ground chili along with the Swiss bouillon cube.
  • When it starts to boil and the potatoes are almost cooked, add salt to taste and let it boil until the potatoes are fully cooked.
