Beef in Tomato Sauce

A typical dish of Mexican cuisine. Made with beef or pork, according to your preference, and basic ingredients like onion and garlic. Essential to win over the stomach of your whole family.

  • 1/2 kilos beef shank
  • 1/2 kilos beef, piece
  • 4 cloves garlic
  • 1 onion, large
  • 1 kilo tomatillo, green
  • coarse salt
  • 3 tablespoons vegetable oil
  • 1 can chipotle chile, small can

  • In the pressure cooker, place all the meat with 2 garlic cloves, half an onion, and coarse salt. Close it, and when the steam releases, let it cook for about 25 minutes.
  • While the meat is cooking... Remove the skin from the tomatoes, wash them, and cut them into medium cubes. Place them in a small pot with water, cover, and let them boil for 8 minutes.
  • Slice the other half of the onion, finely chop the other 2 garlic cloves, place them in a skillet with a little oil, and let them sauté (until they take on a transparent color).
  • Remove the tomatoes from the heat and drain them a little.
  • Once the meat is ready, drain it and in a skillet, add a splash of oil and quickly fry the meat on both sides. In a saucepan, transfer the meat, add the sautéed onion and garlic, and the tomatoes. Mix all the ingredients well. Let it season for 5 minutes.
  • Add to the mixture one cup of the beef broth where you cooked the meat, add 4 chopped chipotle chiles, half a cube of Knorr Swiss flavored rib, and a pinch of salt. Let it season for another 8 minutes, and it's ready!
