I share this birria recipe using beef; it can be substituted with goat or lamb meat, considering to reduce the salt a bit. It is a very flavorful and traditional recipe. Perfect for sharing with family.

Bring the meat and bones to a boil over medium heat with bay leaves, 1/2 onion, and 1/2 tablespoon of sea salt, using enough water to cover them well. Once it reaches a boil, reduce the heat to the minimum and let it simmer for at least 30 minutes before adding the sauce.
To prepare the sauce, wash and dry all the chiles, and set them aside. In a large skillet, fry 1/2 chopped onion and the garlic with a little oil. Once the onion is translucent, transfer it to the blender. In the same skillet, add more oil and fry the chiles; once they are toasted, transfer them to the blender.
In the same blender, add the spice bag, chicken broth, ginger, salt, and pepper. Add a little water and blend very well. This sauce is added to the boiling meat, adding more water and adjusting the salt.
Let it boil until the meat is well cooked.
