Ingredients: 3 kilos beef, (breast or plantain); 3 pasilla chiles; 7 california (anaheim) chili peppers; 7 guajillo chiles; 1 bag aromatic herbs, (pepper, coriander seeds, and bay leaf); 2 onions; 6 cloves garlic; 2 onions; 4 tablespoons granulated chicken bouillon; 1 tablespoon sea salt; 1/2 tablespoons ginger; pork bones, or beef to taste; 1 tablespoon pepper; water, necessary amount

Bring the meat and bones to a boil over medium heat with bay leaves, 1/2 onion, and 1/2 tablespoon of sea salt, using enough water to cover them well. Once it reaches a boil, reduce the heat to the minimum and let it simmer for at least 30 minutes before adding the sauce. To prepare the sauce, wash and dry all the chiles, and set them aside. In a large skillet, fry 1/2 chopped onion and the garlic with a little oil. Once the onion is translucent, transfer it to the blender. In the same skillet, add more oil and fry the chiles; once they are toasted, transfer them to the blender.
