Chambarete Tacos with Green Chile Sauce

Chambarete tacos with green chile sauce are very tasty for a Sunday.

  • 1 1/2 cups serrano chile, in strips for filling
  • 1 can evaporated milk
  • 2 dice garlic seasoning
  • 1 cube chicken broth
  • 1/4 cups tomato purée
  • 1 1/2 tablespoons cornstarch, dissolved
  • 1/2 cups water, fry, to dissolve the cornstarch
  • 1 kilo beef shank, beef, cooked and chopped
  • 12 corn tortillas, heated
  • 1/2 cups fresh cilantro, washed, disinfected, and chopped

  • For the sauce: blend the strips with the following 4 ingredients.
  • Heat in a pot, and when it starts to boil, add the starch, previously dissolved.
  • Cook for 5 minutes or until it thickens a bit, stirring constantly to prevent sticking.
  • Fill each tortilla with the chambarete, pour the sauce over, and garnish with chopped cilantro.
