Meatloaf with Mashed Potatoes

  • 500 grams ground beef
  • 500 grams ground pork
  • 150 grams bacon, fried
  • 2 cloves garlic, finely chopped
  • 1/4 onions, finely chopped
  • 1/2 bunches parsley, finely chopped
  • 200 milliliters tomato purée
  • 300 grams panela cheese
  • 500 grams mashed potatoes
  • salt and pepper

  • Mix all the ingredients in a bowl (except for the cheese).
  • Layer a layer of meat in a baking dish, alternating with a layer of cheese cut into cubes. Cover with aluminum foil.
  • Bake at 180º C for 50 minutes. Remove from the oven. Uncover. Add the mashed potatoes and bake for 10 more minutes. Serve.
