Heat the oil in a skillet over medium heat. Add the garlic and sauté for one minute. Incorporate the onion and sauté for three more minutes, add the meat, and fry for 10 minutes or until golden brown.
Add the Tomato Puree with Chilpotle Del Fuerte® and cook for five minutes. Add the parsley, quinoa, and season with salt and pepper, mixing everything perfectly. It should be slightly moist.
Cut the peppers in half lengthwise. Place them in a baking dish and fill them with the meat sauté.
Bake for 10 minutes. Remove and serve.
