Stuffed Peppers with Meat and Quinoa

  • 4 tablespoons extra virgin olive oil
  • 2 garlic, finely chopped
  • 1/2 onions, finely chopped
  • 500 grams ground meat, beef
  • 1/2 cups tomato purée, with Chilpotle Del Fuerte®
  • 4 tablespoons parsley, finely chopped
  • 1 cup quinoa, cooked
  • 2 tablespoons salt
  • 1 teaspoon ground black pepper
  • 4 bell peppers, cut in half lengthwise

  • Preheat the oven to 200° C.
  • Heat the oil in a skillet over medium heat. Add the garlic and sauté for one minute. Incorporate the onion and sauté for three more minutes, add the meat, and fry for 10 minutes or until golden brown.
  • Add the Tomato Puree with Chilpotle Del Fuerte® and cook for five minutes. Add the parsley, quinoa, and season with salt and pepper, mixing everything perfectly. It should be slightly moist.
  • Cut the peppers in half lengthwise. Place them in a baking dish and fill them with the meat sauté.
  • Bake for 10 minutes. Remove and serve.
