Meatballs in Chipotle with Rice

  • We are going to prepare the meat in a deep container, we add the meat, the 2 eggs, the oats, salt, pepper, and seasoning juice to taste, we mix everything very well and start making the balls.
  • Once the balls are in a deep pan, we add a little oil with a pinch of salt over medium heat and start placing the balls, then cover them for 5 minutes.
  • While they cook a bit, we start making the sauce, we put the 3 tomatoes, the can of chipotle, and a cube of broth in the blender. We blend and add it to the pan with the meatballs for 30 minutes.
  • While they cook, we prepare the rice in another pan, we add the rice with 2 cups of water, the carrot, and chicken broth for 20 minutes.
