Stuffed Meatballs Filled with Cheese

  • 600 grams ground beef
  • 1/3 cups breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons oregano
  • 2 tablespoons mustard
  • salt and pepper
  • 1 egg
  • 1 cup asadero cheese, in small cubes
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1/4 onions, chopped
  • 1 clove garlic, chopped
  • 1/4 cups leek, chopped
  • 1 stem celery, chopped
  • 1 carrot, chopped
  • 1 can La Costeña® beef gravy
  • 2 cups beef broth
  • 1/4 cups La Costeña® chipotle pepper in adobo sauce
  • 2 tablespoons vegetable oil
  • salt and pepper

  • For the meatballs, in a bowl mix the meat with the breadcrumbs, garlic, onion, oregano, mustard, salt, pepper, and the egg.
  • With the help of your hands, form the meatballs filling them with the cheese cubes. Set aside.
  • In a deep skillet, heat the oil with the butter and cook the onion, garlic, leek, celery, and carrot. Add La Costeña® beef gravy, beef broth, and La Costeña® chipotle. Let it come to a boil, remove from heat, and cool slightly.
  • Blend the previous preparation until you obtain a smooth sauce.
  • In the same skillet, sear the meatballs over high heat with a little oil. Add the sauce, lower the heat, and let the meatballs cook covered until they are done. About 30 minutes, season with salt and pepper.
  • Serve with the sauce.
