Rib Eye and Chickpea Tacos

  • 3 Tomatillas®
  • 150 grams rib eye, cut into strips
  • 1 cup canned chickpea
  • 1/2 cups red cabbage, grated
  • 12 cherry tomatoes, diced
  • 1/2 cups lettuce, finely chopped
  • 3 tablespoons olive oil
  • 1 handful sprouts
  • dressing, of avocado

  • Sear the meat with salt, pepper, and olive oil to taste; let it rest for a few minutes and cut it into strips.
  • Rinse the chickpeas and disinfect the tomatoes, lettuce, and purple cabbage.
  • Heat the Tomatillas on a griddle.
  • Roll the strips of rib eye with chickpeas on the Tomatillas using the toothpicks.
  • Add the chopped vegetables and dressing to taste.
