Sirloin with Chipotle Sauce

2 sirloin, large (leaving the fat around it)
1/2 liters sour cream, heavy cream
chipotle chiles, finely chopped (the amount is to taste)
1 onion, medium cut into quarters
vegetable oil, as needed
2 tablespoons fresh cilantro, finely chopped
salt
pepper

In a large skillet that can fit both cuts of meat, heat a little oil.
Once hot, brown the onion quarters, letting them cook over low heat until they brown.
Once browned and soft, season them with salt and pepper.
Add the heavy cream, cilantro, and chipotle.
Cook for 5 more minutes, season with a little salt and pepper, mix, taste, and set aside.
To prepare the meat, season it with salt and pepper.
Heat a non-stick skillet preferably, and once it’s very hot, lower the heat and add the meat. Cook it to your desired doneness.
