Sirloin with Chipotle Sauce

So rich, so juicy, the fat adds great flavor to the meat while cooking. Enriching this meat with chipotle sauce is a delight. A very creamy sauce with a subtle hint of spiciness.

  • 2 sirloin, large (leaving the fat around it)
  • 1/2 liters sour cream, heavy cream
  • chipotle chiles, finely chopped (the amount is to taste)
  • 1 onion, medium cut into quarters
  • vegetable oil, as needed
  • 2 tablespoons fresh cilantro, finely chopped
  • salt

  • In a large skillet that can fit both cuts of meat, heat a little oil.
  • Once hot, brown the onion quarters, letting them cook over low heat until they brown.
  • Once browned and soft, season them with salt and pepper.
  • Add the heavy cream, cilantro, and chipotle.
  • Cook for 5 more minutes, season with a little salt and pepper, mix, taste, and set aside.
  • To prepare the meat, season it with salt and pepper.
  • Heat a non-stick skillet preferably, and once it’s very hot, lower the heat and add the meat. Cook it to your desired doneness.
