Arrachera Fajitas

  • 500 grams skirt steak, in strips
  • 3 tomatoes
  • 1 onion, cut into julienne
  • 1 bell pepper, in strips
  • 1 clove garlic
  • 5 tablespoons refried beans
  • 6 corn tortillas
  • 1 tablespoon epazote, in flakes
  • 1 tablespoon ground marjoram
  • 1/2 tablespoons ground pepper
  • 1 tablespoon vegetable oil
  • salt

  • Wash the tomatoes, peel them, and place them in a bowl to mash with a bean masher until pureed.
  • In a skillet, heat the vegetable oil over medium heat and sauté the onion and garlic for 2 minutes.
  • Add the bell pepper and cook for 5 minutes. Incorporate the arrachera fajitas and stir constantly while they seal (2-3 minutes).
  • Add the tomato puree, beans, spices, and let everything cook for another 10 minutes.
  • On a hot griddle, heat the tortillas and serve with the fajitas.
