Filet Medallions in Morita

  • 1/4 cups salsa, Traditional Huichol®
  • 2 cups water, or as needed
  • 2 red beefsteak tomatoes
  • 1/2 white onions
  • 6 morita chiles, seedless
  • 1 clove garlic
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 kilo beef tenderloin, (medallions)
  • 1/2 cups vegetable oil

  • Cook the tomatoes, onion, chiles, and garlic clove in hot water until softened.
  • Blend with the sauce and a little bit of cooking water, salt, and pepper.
  • Sear the medallions in a pan with a little oil, pour the sauce over them, and finish cooking.
  • Serve with refried beans.
