1/4 cups salsa, Traditional Huichol®
2 cups water, or as needed
2 red beefsteak tomatoes
1/2 white onions
6 morita chiles, seedless
1 clove garlic
1 teaspoon salt
1 teaspoon pepper
1 kilo beef tenderloin, (medallions)
1/2 cups vegetable oil
Preparation

Cook the tomatoes, onion, chiles, and garlic clove in hot water until softened.
Blend with the sauce and a little bit of cooking water, salt, and pepper.
Sear the medallions in a pan with a little oil, pour the sauce over them, and finish cooking.
Serve with refried beans.
