300 grams cherries, boneless
2 teaspoons olive oil
1 1/2 tablespoons balsamic vinegar
1 1/2 tablespoons sugar
2 tablespoons parsley, chopped
2 tablespoons peppermint, chopped
4 tablespoons vegetable oil
salt, to taste
pepper, to taste

Put the oil in a skillet and add the fillets.
Cook the fillets on both sides and season with salt and pepper.
In a separate bowl, mix the halved cherries with olive oil, vinegar, sugar, and a pinch of salt.
Let it rest for 5-10 minutes and add the parsley and mint.
Serve the fillets drizzled with the cherry sauce.
