Fillet with Cherry Sauce

  • 4 fish steaks
  • 300 grams cherries, boneless
  • 2 teaspoons olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • 1 1/2 tablespoons sugar
  • 2 tablespoons parsley, chopped
  • 2 tablespoons peppermint, chopped
  • 4 tablespoons vegetable oil
  • salt, to taste
  • pepper, to taste

  • Put the oil in a skillet and add the fillets.
  • Cook the fillets on both sides and season with salt and pepper.
  • In a separate bowl, mix the halved cherries with olive oil, vinegar, sugar, and a pinch of salt.
  • Let it rest for 5-10 minutes and add the parsley and mint.
  • Serve the fillets drizzled with the cherry sauce.
