This is one way to prepare your picanha with two cooking levels to suit everyone's tastes! Picanha is a very juicy cut that everyone loves for its delicious flavor.
First, season the meat with salt and pepper on all sides in sufficient quantity to penetrate the entire piece of meat.
Heat a cast iron griddle over high heat until it's hot enough to sear the piece of meat on both sides, three minutes per side.
Place the picanha in a baking dish, and put it in the oven at 350ºF (preheated oven) for 50 minutes.
If you and your guests prefer medium, take it out of the oven after 50 minutes, let it rest for 5 minutes, and slice the piece. If your guests have different preferences, slice half of the piece and return the slices and the other half back to the baking dish and bake for 20 more minutes.
At the end of this time, you will have your slices well cooked and the other half of the piece at medium-rare.
Finally, finish slicing your picanha and dip the slices in the meat juices left in the baking dish before serving; this step will keep them juicy and with an unmatched flavor!
Serve your meat with a side of mashed potatoes or a baked potato that you can cook at the same time as your PICAÑA.
