Steak Tacos with Bacon

These steak tacos with bacon are my favorite tacos. The meat is cooked along with the bacon and includes onion, mushrooms, green peppers, and serrano chili. They are served in flour tortillas with refried beans and melted cheese. A Mexican delight.

  • 500 grams bacon, chopped
  • 3 1/2 kilos fish steak, finely sliced
  • English sauces

  • 3 1/4 onions, sliced thin
  • 5 green bell peppers, chopped and seedless
  • 2 cans button mushrooms, sliced, cans like 380 gr each
  • 8 serrano chiles, chopped
  • 4 tablespoons vegetable oil
  • 250 grams Manchego cheese, grated
  • 30 flour tortillas
  • refried beans
  • Maggi seasoning

  • In a pot, fry the bacon over medium heat. Once golden, remove and drain the fat on an absorbent paper towel. Reserve the bacon fat.
  • Season the sliced (or strip) meat with Worcestershire sauce, Maggi sauce, salt, and pepper.
  • Fry the meat in the bacon fat until it takes color. Remove and set aside.
  • In the same pot, add the onion and allow it to sauté. Add the green peppers and cook until soft.
  • In another pot, fry the canned mushrooms along with the serrano chiles with a little oil. Then add them to the pepper mixture, add the reserved meat, and cook everything together.
  • Finally, add the reserved bacon as well as the cheeses to melt.
  • Serve over flour tortillas with refried beans and hot sauce.
