Steak with Red Wine Sauce

A delicious beef steak with a spice crust and a red wine sauce. A classic and spectacular dish.

  • 2 tablespoons olive oil
  • 2 tablespoons fresh thyme, finely chopped
  • 1 tablespoon black peppercorn, freshly ground
  • coarse salt
  • 1 kilo fish steak
  • 2 tablespoons unsalted butter, (for the sauce)
  • 1 tablespoon olive oil, (for the sauce)
  • 1/4 cups garlic, (for the sauce)
  • 1 cup button mushrooms, sliced (for the sauce)
  • 1 bottle dry red wine, (for the sauce)
  • 2 cups beef broth, (for the sauce)
  • 1 tablespoon flour, (for the sauce)
  • 1 teaspoon sugar, (for the sauce)
  • salt, and pepper to taste (for the sauce)

  • In a bowl, mix the olive oil, thyme, salt, and pepper and cover the entire steak with the mixture.
  • To make the sauce, start by heating half of the butter and the olive oil in a pan.
  • Add the mushrooms, garlic, sugar, and salt, and cook for 5 minutes or until everything begins to brown.
  • Add the thyme and half of the wine. Cook on low heat to reduce the wine for 15 minutes.
  • Add the remaining wine and reduce again for 15 minutes.
  • Add the beef broth and continue cooking until it reduces to just 1 1/2 cups of sauce.
  • In another pot, heat the remaining butter and add the flour, mixing with a whisk until a thick paste forms. Add the wine reduction and incorporate with the whisk, allowing it to cook for 5 minutes.
  • Preheat the oven to 180 degrees Celsius and place the rack in the center of the oven. Bake the steak for 40 minutes or until the desired doneness is reached. Wait 10 minutes before serving and accompany with the sauce.
