Stuffed Meatloaf with Vegetables

An easy recipe to make, and it will be versatile; it can be part of your daily menu as a main dish, and if you have some left, it can also be part of a sandwich in the morning.

  • 1 kilo beef, ground
  • 1/4 kilos bacon, in strip
  • carrots, peeled and in strips
  • chayotes, peeled and in strips
  • zucchinis, in strips
  • bell pepper, in strips
  • garlic
  • salt
  • pepper

  • To the ground meat, add salt, pepper, and garlic powder, and spread it over a damp cloth, forming a rectangle.
  • Place the vegetables on top of the meat and roll the meat.
  • Wrap the roll with the strips of bacon.
  • Place in a baking dish and cover with aluminum foil.
  • Bake for approximately 30 minutes. After 15 minutes, flip it to ensure it cooks and colors on all sides; after 30 minutes, remove the foil and if desired, leave it for an additional 5 minutes to brown and gain color.
