Tostone with Shredded Meat

Colombia is a great producer of plantains, and therefore plantains can never be missing from any Colombian household table, prepared in a thousand ways, this time in a combination of meat and hogao that for any Colombian is simply a delight for the palate; I add cream because it makes it very smooth.

  • 1 pound meat, flank
  • aromatic herbs, (1 bay leaf, thyme, oregano) vegetables (garlic, onion, carrot)
  • 4 bananas, green with yellow spots
  • 3 tomatillos
  • 1/4 onions
  • 1 head garlic
  • 1 tablespoon vegetable oil
  • vegetable oil, for frying
  • salt, to taste
  • pepper, to taste
  • sour cream, optional

  • Place the meat in the pressure cooker with the herbs and vegetables and let it cook for one hour or until the meat is tender, let it cool and shred all the meat, set aside.
  • In a saucepan, place the finely chopped onion, tomatoes, and garlic with the oil, salt, and pepper, sauté for 7 minutes, and finally add about three tablespoons of the meat broth, let it reduce a bit, then add the shredded meat and let it cook for a few more minutes; you can add a little cream to soften the flavor, although it is very delicious just as it is.
  • Meanwhile, heat the oil over medium heat and add the peeled plantains cut into portions of about 10 centimeters until they are lightly browned. Remove them from the oil onto absorbent paper and let them rest for a few minutes, then flatten them until a thin arepa or tostone is formed and return them to the oil, this time the oil should be very hot, and let them fry until golden, then place them back on the absorbent paper, set aside.
  • On each tostone place the shredded meat hogao and if you wish, you can grate cheese on top.
