White Tripe

It's a very good tripe or pancita, I'm sure you will like it a lot. It's ideal for this Christmas season, served with cilantro, onion, lime, chiltepín, and a virote bread, so go ahead and prepare it.

  • 1 kilo beef tripe
  • 1 kilo cow's feet
  • 1 kilo corn kernels, precooked
  • 1 onion
  • 1 serrano chile
  • 1 head garlic
  • limes
  • 1 onion
  • baguettes
  • water, the necessary
  • salt, to taste
  • 4 cubes chicken bullion
  • fresh cilantro

  • In a pot, boil the beef leg with plenty of water.
  • Cut the tripe into not very small squares and wash the corn.
  • Once the water with the beef leg has boiled for about 15 minutes, add the corn.
  • After 20 minutes of adding the corn, you can add the tripe.
  • Let it cook for a good while until everything is cooked, then add the onion, the head of garlic, the green chili, salt, and chicken bouillon.
  • On the side, finely chop the onion and cilantro.
