Beer Marinade

Prepare this beer-based marinade with spicy sauces, black pepper, cayenne pepper, and mustard. This method of marinating is great for tenderizing moderately thick cuts of meat that cook quickly, such as flank steak.   • 1 kilo skirt steak, natural, unmarinated
  • 2 tablespoons Maggi seasoning
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon garlic, finely chopped
  • 1 tablespoon black pepper, mashed
  • 1 tablespoon cayenne pepper
  • 3 tablespoons Dijon mustard
  • 1/4 cups olive oil
  • 1 cup serrano chile, sliced
  • 1 cup red onion, chopped
  • 1 tablespoon oregano
  • 1/4 cups fresh cilantro, chopped
  • 1 tablespoon lemon juice
  • 2 cups beer
  • 1 pinch salt

  • In a bowl, mix the flank steak with the sauces, garlic, black pepper, cayenne pepper, mustard, olive oil, serrano chili, red onion, oregano, cilantro, lemon, pour in the beer and marinate for 1 hour.
  • Heat a grill over medium heat, season the meat with salt and cook to desired doneness, serve with grilled spring onions, enjoy.
