Skirt steak is a cut of beef originating from Mexico. This meat is very rich for marinating. This recipe contains a very flavorful marinade.

1 kilo skirt steak, beef
1 can lager beer
1 lime
1 tablespoon ground black pepper
3 cloves garlic
3 tablespoons red wine vinegar
4 tablespoons coarse salt
2 tablespoons Worcestershire sauce

In a large bowl, mix the beer, lemon juice, spices, Worcestershire sauce, vinegar, and garlic.
With a meat mallet (or a regular hammer), tenderize the meat to make it softer.
Marinate the skirt steak in this sauce for at least 2 hours at room temperature.
Prepare your grill so that it is ready to cook the meat over medium heat.
Cook the skirt steak on the grill for about 6 minutes on each side if you want the meat medium rare.
Remove from the heat.
