Breaded Chicken Breasts

Breaded chicken breasts with high-fiber cereal and Pam.

  • 4 chickens
  • 1 1/2 cups cornflakes cereal, Chopped Special K
  • 1/2 cups whole-wheat flour
  • 1/2 teaspoons black pepper
  • 1/2 cups skim milk
  • 1/4 cups egg white

  • Preheat the oven to 350 degrees Fahrenheit.
  • Put cereal in a blender and blend until finely chopped, measuring about 3/4 cup. Place flour and pepper in another small plate. Mix egg whites and milk in another small plate.
  • Dip each chicken breast in flour, then in egg whites, and finally in the cereal mixture to bread.
  • Place the chicken breasts on a baking sheet and spray Pam on each side. Cook for 20-25 minutes. Serve immediately.
