Breaded Chicken Cutlets with Panela Cheese

  • 4 chicken cutlets
  • 8 slices turkey deli ham
  • 200 grams panela cheese, cut into thick sticks
  • 1/2 cups flour
  • 185 grams Bimbo® corn flake breading machine
  • 4 tomatoes, finely chopped
  • 1/4 red onions, finely chopped
  • 2 avocados, cut into cubes
  • 1/4 pineapples, cut into cubes
  • 2 tablespoons fresh cilantro, finely chopped
  • 2 serrano chiles, finely chopped
  • 1/4 cups lime juice
  • 1/2 cups olive oil
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 1 Romaine lettuce, for serving

  • Place a chicken cutlet on a board, add two slices of ham and a bit of cheese, roll it up and insert toothpicks to hold the shape.
  • Bread each chicken cutlet by passing it through flour, egg, and Bimbo® Corn Flakes Breadcrumbs.
  • Heat a skillet over low heat and cook the chicken rolls until they are cooked through. Cover if necessary.
  • For the sauce, mix all the ingredients in a bowl and set aside.
  • Serve the cutlets with the sauce.
