4 chicken cutlets
8 slices turkey deli ham
200 grams panela cheese, cut into thick sticks
1/2 cups flour
185 grams Bimbo® corn flake breading machine
4 tomatoes, finely chopped
1/4 red onions, finely chopped
2 avocados, cut into cubes
1/4 pineapples, cut into cubes
2 tablespoons fresh cilantro, finely chopped
2 serrano chiles, finely chopped
1/4 cups lime juice
1/2 cups olive oil
1 teaspoon salt
1/2 teaspoons pepper
1 Romaine lettuce, for serving

Place a chicken cutlet on a board, add two slices of ham and a bit of cheese, roll it up and insert toothpicks to hold the shape.
Bread each chicken cutlet by passing it through flour, egg, and Bimbo® Corn Flakes Breadcrumbs.
Heat a skillet over low heat and cook the chicken rolls until they are cooked through. Cover if necessary.
For the sauce, mix all the ingredients in a bowl and set aside.
Serve the cutlets with the sauce.
