Breaded Chicken with Mole

The breaded chicken is a common dish in Mexican households and very likely in some other parts of the world. On this occasion, we present a breaded chicken that is accompanied by a very easy and quick mole to prepare, it will give it a different twist!

  • 1/4 onions, for the mole
  • 1 clove garlic, for the mole
  • 4 tomatoes, for the mole
  • 1 apple, for the mole
  • 3 ancho chiles, for the mole
  • 4 pasilla chiles, for the mole
  • 3 morita chiles, for the mole
  • 2 slices white bread, for the mole
  • 1 clove, for the mole
  • 3 pepper, for the mole
  • 1/4 teaspoons cumin, for the mole
  • 1/2 teaspoons cilantro seeds, for the mole
  • 1/2 teaspoons oregano, for the mole
  • 2 tablespoons raw sugar, for the mole
  • 1 cup chicken broth, for the mole
  • 1 cup pumpkin seeds, for the mole
  • 1 cup peanuts, for the mole
  • flour, for the breaded chicken
  • 2 eggs, for the breaded chicken
  • corn flakes, ground, for the breaded chicken
  • 4 chicken cutlets, for the breaded chicken
  • vegetable oil, for the breaded chicken
  • candied sesame seeds, for decorating

  • For the mole, heat a pot over medium heat and fry the onion, garlic, and apple; add all the chiles and the white bread, add the clove, pepper, coriander seed, oregano, brown sugar, and chicken broth, cook for 5 minutes until the ingredients soften.
  • Blend the ingredients you previously fried, add the pumpkin seed, the peanut, and add more broth if necessary.
  • Again, heat the pot and add a little oil, then the mole you blended and add salt, cook for 10 minutes until all the flavors are integrated.
  • For the breaded chicken, coat the seasoned chicken breasts in flour, egg, and ground corn flakes.
  • Fry the breaded chicken in plenty of oil over medium heat. Remove excess fat with paper towels.
  • Serve the breaded chicken with the mole, decorate with candied sesame and green onion.
