Place a cast iron skillet over the charcoal grill, melt the butter and lightly brown the chopped garlic with black pepper. Add the onion, brown sugar, balsamic vinegar, and grainy mustard to taste, cook until the onion starts to take on a slightly dark color, then add the ketchup, cooking until the sauce is slightly thickened. Reserve until use.
For the meat mixture, in a bowl mix the ground beef, onion, garlic powder, egg, potato flakes, cilantro, salt, and pepper. Form large balls with your hands, flatten them, and set aside on a tray until use.
On the charcoal grill, cook the hamburger meat to your desired doneness, when the meat is almost at your desired point, place a little of the sauce with the help of a brush, add the Chihuahua cheese with shredded cheddar cheese, and cover to melt and concentrate the heat. Remove from the heat.
Heat the hamburger buns on the grill. Assemble your burger, place the meat patty, add the fried bacon, and drizzle with a little more sauce, add red onion and baby arugula to taste. Serve with a bottle of well-chilled Negra Modelo® Beer and wedge fries to taste.
