Caramelized Ham

A glazed ham with apricot jam, a perfect dish for Christmas.

  • 3 kilos ham, of 3 kilograms
  • 2 cups apricot jam
  • 1/4 cups mustard seeds
  • 2 tablespoons butter

  • Preheat the oven to 200 degrees Celsius.
  • Prepare a large roasting pan with aluminum foil and place a roasting rack inside the pan.
  • Take the ham and remove part of the fat layer, leaving a very thin cover. Make diamond-shaped cuts on the fat layer of the ham without cutting into the meat.
  • Position the ham in the roasting rack with the fat side facing up and roast for 1 hour.
  • In a deep bowl, combine the jam and mustard.
  • Remove the ham from the oven and brush with the jam sauce, then return to the oven. Repeat this every 15 minutes until the jam is used up and the ham is golden and shiny (about an additional 1 hour).
  • Remove the ham from the oven and keep warm until serving.
