This recipe is a delicious creation of carnitas tacos for you to enjoy this exquisite Mexican dish with your whole family. Prepare it for breakfast, lunch, or even dinner. Serve with delicious green, red, or árbol salsa.
Place the pork in a large, heavy pot and season with 1 teaspoon of salt, 1 teaspoon of garlic powder, and 1 teaspoon of pepper.
Add 1 cup of water. Cover the pot but leave it slightly open on one side.
Let it boil at a temperature just above medium for about 20 minutes or until all the water evaporates.
Do not touch the meat while it steams.
In a medium bowl, mix the tomatillos, tomatoes, white onion, garlic, serrano chiles, cilantro, olive oil, oregano, the juice of 1 lime, 1 teaspoon of salt, and 1/2 teaspoon of pepper.
Stir well to combine and taste for saltiness.
Cover the bowl and set the mixture aside.
In a cup, mix the freshly squeezed orange juice and the juice of 1/2 lime. When the water from the carnitas has evaporated, add the juice mixture and let it cook.
When all the juice evaporates, remove the lid, add the lard, and the stick of cinnamon.
Cook the pork until it is well browned, turning it as necessary.
Remove it from the oil with a slotted spoon and place it on a plate lined with paper towels.
Let it cool slightly before cutting the meat and placing it on a covered tray.
In a small bowl, mix the avocados, the remaining lime juice, and 1/2 teaspoon of salt.
Stir well and taste for saltiness.
Heat the tortillas on a large grill or comal and keep them warm in a tortilla warmer or wrap them in aluminum foil. Serve the tacos with salsa and fresh avocados.
