Cheese-Stuffed Beef Rolls in Creamy Tomato Sauce

If you don't know what to prepare for your family during the week, go ahead and make these delicious cheese-stuffed beef rolls in creamy tomato sauce, they are practical and very easy to make. Serve them with baby potatoes and baby carrots.

1 cup evaporated milk
1 cup table cream
5 tomatoes, poached
1/2 cups tomato purée
1/2 onions
1 clove garlic
1 tablespoon butter
salt and pepper
1 teaspoon oregano
4 beef cutlets
1 cup Manchego cheese, in sticks

For the sauce, blend the evaporated milk with the cream, tomatoes, tomato puree, onion, and garlic.
In a small pot, melt the butter and add the sauce, cook for 20 minutes and season with salt, pepper, and oregano.
On a cutting board, place the beef cutlets, season with salt and pepper, fill with cheese and roll up. Secure with toothpicks if necessary.
In a skillet with oil, cook the rolls until they are cooked through.
Serve on a plate with the creamy tomato sauce, and accompany with baby potatoes and baby carrots.
