Cheese-Stuffed Meat Roll

With this heat, grilling can be a great option, and what better than these marinated beef rolls with Kikkoman® soy sauce and filled with a cheese mixture, perfect for your summer afternoons. Making these cheese-stuffed meat rolls is very easy, and the results are amazing. Enjoy them with a very cold drink!

  • 3 tablespoons garlic, finely chopped, for the marinade
  • 1/2 cups green onion, with tail, finely chopped, for the marinade
  • 1 tablespoon ginger, grated, for the marinade
  • 1/4 cups lime juice, for the marinade
  • 3 tablespoons honey, for the marinade
  • 1 tablespoon chile flakes, for the marinade
  • 1/2 cups peanuts, chopped, for the marinade
  • 1/4 cups cilantro, chopped, for the marinade
  • 1 cup Kikkoman® traditionally brewed soy sauce
  • 1 1/2 kilos beef tenderloin, in sheet

  • 2 cups Manchego cheese, sliced
  • 1 cup asadero cheese, sliced
  • 1 cup Oaxaca cheese, shredded
  • 3 tablespoons sesame oil
  • green onion, grilled, for serving

  • mixed vegetables, steamed, for serving

  • In a bowl, mix the garlic, green onion, ginger, lemon juice, honey, chili flakes, peanuts, cilantro, and Kikkoman® Teriyaki Sauce; stir and incorporate the ingredients.
  • Place the meat in a large container, add pepper, and pour the mixture over until completely covered. Marinate for 30 minutes in the refrigerator.
  • Lay the beef loin on a board, fill with bacon, slices of manchego cheese, asadero cheese, and shredded oaxaca cheese, roll it up, and tie it with cotton thread. Bake for 25 minutes at 200 °C.
  • Remove the loin from the oven, cut the tying thread, and slice into 2-centimeter thick medallions.
  • Pour sesame oil over a hot grill pan, place the meat medallions, and cook for 20 minutes on low heat, turning and repeating.
  • Serve accompanied by green onions, mushrooms, and steamed vegetables.
