The flautas are a very tasty and filling dish. They are named for being tacos that resemble flautitas. This flauta recipe features a chicken and potato filling, and you can find more filling ideas in the tips section.
Heat 1 tablespoon of oil in two pans and sauté half of the onion in each pan for 2 minutes.
In one pan, add the boiled potato and in the other pan, the shredded chicken. Mix well with the onion and cook for 2 more minutes.
Remove each filling from the pans and place in two deep containers.
Season the chicken filling with salt and pepper and set aside. For the potato filling, mash the potato with a fork until you achieve a chunky mashed potato. Season with salt and pepper.
Fill 6 tortillas with the chicken filling and 6 tortillas with the potato filling. Roll each tortilla into a flauta shape (like the photograph). Use toothpicks to secure the flautas so they don't open while frying.
In a pot, heat 1 cup of vegetable oil for 3 minutes. Fry the flautas (2 at a time) until the tortillas are lightly golden.
Remove the flautas from the oil and dry with a paper towel to remove excess oil.
