Chicken Cacciatore

A very tasty recipe, Chicken Cacciatore is a traditional Italian dish where the chicken is cooked in a sauce of wine, tomatoes, spices, and capers. Simply delicious, perfect for cooking for the people you care about the most.

  • 2 chicken breasts, with skin

  • Season the chicken with salt and pepper and coat the pieces in flour.
  • In a large pot, heat the oil over medium-high heat. Add the chicken pieces and sauté until browned (about 5 minutes per side). Transfer the chicken to a plate and set aside.
  • Add the bell pepper, onion, and garlic to the same pan and sauté over medium heat until the onion is golden, about 5 minutes. Season with salt and pepper.
  • Add the wine and simmer until reduced by half, about 3 minutes. Add the tomatoes with their juice, the broth, the capers, the olives, and the oregano.
  • Return the chicken to the pan. Continue to simmer the sauce until the chicken is cooked through, about 30 minutes for the breasts and 20 minutes for the thighs.
