A very tasty recipe, Chicken Cacciatore is a traditional Italian dish where the chicken is cooked in a sauce of wine, tomatoes, spices, and capers. Simply delicious, perfect for cooking for the people you care about the most.
Season the chicken with salt and pepper and coat the pieces in flour.
In a large pot, heat the oil over medium-high heat. Add the chicken pieces and sauté until browned (about 5 minutes per side). Transfer the chicken to a plate and set aside.
Add the bell pepper, onion, and garlic to the same pan and sauté over medium heat until the onion is golden, about 5 minutes. Season with salt and pepper.
Add the wine and simmer until reduced by half, about 3 minutes. Add the tomatoes with their juice, the broth, the capers, the olives, and the oregano.
Return the chicken to the pan. Continue to simmer the sauce until the chicken is cooked through, about 30 minutes for the breasts and 20 minutes for the thighs.
