  • 6 chicken cutlets

  • 400 grams deli ham, sliced
  • 2 cups Manchego cheese, grated
  • 1 cup flour
  • 2 eggs
  • 1 cup breadcrumbs
  • vegetable oil
  • 2 cups whipping cream
  • 3 tablespoons mustard
  • 2 tablespoons Parmesan cheese

  • bacon, fried, finely chopped, for garnish

  • On a board, place six chicken cutlets, season with salt and pepper.
  • Place slices of ham covering the chicken breast, then add the manchego cheese and start forming a roll by closing the breast, securing it with toothpicks. Refrigerate for 20 minutes.
  • To make the sauce, in a pot add the heavy cream, parmesan cheese, and mustard, mix for 5 minutes until you have a homogeneous mixture. Season with salt and pepper and set aside.
  • Place the egg in a bowl and mix, add the flour in another bowl and do the same with the breadcrumbs.
  • Pass the roll starting with the flour, completely covering it, then dip in the egg and finally in the breadcrumbs, making sure to cover everything well.
  • In a baking tray with aluminum foil, place the roll and spray with vegetable oil, bake for 30 minutes and uncover the roll to finish browning it; if necessary, turn it to brown evenly.
  • Remove and place on a board for 5 minutes, then cut into slices 2 to 3 cm wide and place on a long platter, garnish with fried bacon and accompany with Dijon sauce.
